Late-Summer Tomato & Charred Corn Salad
Peak Season Perfection: The Late-Summer Tomato & Corn Salad You Can't Miss
If there's one thing I've learned from years of eating close to the source, it's this: you don't need to do much when the ingredients are this good. And right now, in the middle of August, we are living in the sweet spot.
Local tomatoes and fresh corn are at their absolute peak. Not the pale, mealy stuff you find in January - I'm talking heirloom tomatoes, sweet silver queen corn, and everything in between that your farmers market has been building toward all summer. This is the moment. Don't sleep on it.
Why This Combo Is a Nutrition Win
Tomatoes are loaded with lycopene - a powerful antioxidant that research continues to link to heart health and reduced inflammation. When you eat them ripe and in season, you're getting significantly more of it than anything off-season. Corn gets a bad rap sometimes, but fresh corn is a solid source of fiber, B vitamins, and natural sweetness that needs zero added sugar. Pair them together with fresh herbs and a good extra virgin olive oil, and you've got a dish that checks every trending box: anti-inflammatory, plant-forward, whole food, local, seasonal.
Shop Local First
Before you do anything else, hit your farmers market or a local farm stand this week. Look for heirloom tomatoes in mixed colors if you can find them - the visual alone is half the appeal. For corn, ask when it was picked (should be in the husk and looking fresh). Same-day or day-before corn is a completely different experience. This is the kind of sourcing that makes simple food extraordinary.
Late-Summer Tomato & Charred Corn Salad with Basil Vinaigrette
Serves 4 | Ready in 20 minutes
Ingredients
- 3 ears of fresh local corn, shucked
- 1.5 lbs mixed heirloom tomatoes, cut into wedges and halved cherry tomatoes
- 1/4 red onion, very thinly sliced
- 1/3 cup fresh basil leaves, torn, plus more for garnish
- 2 oz fresh burrata or good mozzarella, for topping
- Flaky sea salt and cracked black pepper
For the basil vinaigrette:
- 1/4 cup fresh basil leaves
- 3 tablespoons good extra-virgin olive oil "I recommend my Fresh California EVOO"
- 1.5 tablespoons red wine vinegar
- 1 small garlic clove
- Pinch of salt
Instructions
1. Heat a cast iron skillet or grill pan over high heat. Char the corn cobs dry, turning every couple of minutes, until you get good color on all sides - about 8-10 minutes. Let cool, then cut the kernels off.
2. While the corn cools, blend all vinaigrette ingredients until smooth. Taste and adjust salt or vinegar.
3. Arrange the tomatoes on a platter and season generously with flaky salt. Let them sit for 5 minutes - this draws out their juices and creates a natural base for the dressing.
4. Scatter the charred corn over the tomatoes. Add the red onion and torn basil.
5. Drizzle the vinaigrette over everything. Finish with burrata or mozzarella broken over the top, a little more fresh basil, and cracked pepper.
6. Serve immediately, at room temperature, with crusty bread to catch every drop of the tomato juice at the bottom of the platter.
Tips
- Salt your tomatoes early. Seriously, don't skip this step.
- Room temperature matters. Cold tomatoes lose their flavor - never refrigerate them.
- This recipe is a base. Add white beans or grilled shrimp if you want protein. Throw in sliced peaches if you have them - it works beautifully.
The Bottom Line
The best food you can eat right now costs very little and lives about 20 miles from you. Find your farmers market, talk to the grower, and eat what's at its peak. This salad is proof that local, seasonal eating isn't a diet trend - it's just the most delicious way to eat.
