Tomato Pie

Ingredients: 

  • 5 fresh tomatoes , sliced thin 
  • 10 fresh basil leaves , chopped
  • 1/2 cup green onion (or red onion), chopped
  • 9-inch pie shell (pre-baked) 
  • 1 cup shredded mozzarella cheese
  • 1 cup freshly shredded cheddar cheese
  • 1 cup mayonnaise 
  • salt and freshly ground black pepper

Method: 

  1. Preheat oven to 350 degrees F.
  2. Slice tomatoes thin and place on a baking sheet, sprinkle with extra virgin olive oil and sea salt. 
  3. Roast at 350 for 10 to 15 minutes till the edges start to show color. 
  4. Drain 
  5. Layer the tomato slices, basil, and onion in pre-baked pie shell Season with salt and pepper.
  6. Combine the grated cheeses and mayonnaise.
  7. Spread mixture on top of the tomatoes. 
  8. Bake for 30 minutes or until lightly browned. Allow to rest for at least 15 minutes before cutting and serving.

Alternate Prep: 

Slice tomatoes thin place the tomatoes in a colander (single layer.) Sprinkle with salt and allow them to rest for 10 minutes.
